The first SDA meeting of the new semester was held Tuesday, February 5th. Members gathered to make Valentine’s Day cards for the Arkansas Children’s Hospital as well as decorate birthday cakes for the Arkansas Dream Center. Thanks for the hard work SDA! If you are interested in joining SDA, future meetings will be held March 5th and April 2nd. Show up to any meeting or contact SDA President Kaylee O’Hare.
Dietetic Interns Host UCA’s First BeWell Cooking Demo!
Yesterday, January 31st, marked UCA’s first BeWell Cooking Demo. Members of the 2018-2019 Dietetic Intern class demonstrated ways to incorporate whole grains into a healthy diet. They prepared vegetable fried rice and offered samples of various whole grain snacks. Future demo topics will include, avocado night, taco night, salad night, and using herbs and spices. Great work ladies!

American Association of Family & Consumer Sciences (AAFCS)
The purpose of AAFCS is to provide for and to promote the professional development of family & consumer sciences students. All FACS, Nutrition, and Interior Design students are welcome! AAFCS provides students with volunteer, networking, and leadership oppurtunities.
- Meetings will be held at X-Period (1:40-2:30) in MAC 210
- January 22nd
- February 25th
- March 26th
- Dues are $10 per year
Student Dietetic Association (SDA)
The purpose of SDA is to provide a support system for Nutrition and Dietetic students, community service opportunities, and nutrition information to the public. Students may join at any time during the semester. Just show up at one of the scheduled meetings or contact one of the SDA officers or the faculty advisor.

Welcome Back to FACS!
The FACS department welcomes students into the Spring 2019 semester! As we enter 2019 we would like to reflect on some of the big moments of 2018:
Nutrition Department
- The 2018-2019 Dietetic Intern class attended their first Food and Nutrition Conference and Expo! The conference was held in Washington DC and allowed interns to participate in innovative education sessions and explore 1,000s of products being used in the dietetics field.
FACS
- More than 500 Americans participated in FCS Day by choosing to “Dine-in” on December 3rd, which is founder Ellen Richard’s birthday.
- On December 27th, FACS students partnered with CASA to stuff stockings for children in foster care.
Interior Design
- UCA Interior Design students explored the Carrara Marble Mines in Carrara, Italy. These mines are where Michelangelo, along with many other artists, found marble for their masterpieces.
Scholarships for FACS Majors
The criteria for one or both of the Arkansas Extension Homemakers Council Scholarships of $1000 each is as follows:
- This scholarship is awarded to a junior in college (with a minimum of 59 credit hours completed) majoring in Family and Consumer Sciences/Human Environmental Sciences.
- The student must be enrolled in an Arkansas college or university.
- The student must have an accumulative grade point of 2.5 or higher
- Preference will be given to an Arkansas high school graduate or native of Arkansas
- The final decision will be made by the three Arkansas Extension Homemakers Council District Directors from the nominees submitted.
- Incomplete applications will not be considered.
- The Scholarship is written to the school attending.
UCA FACS Alums selected for Clinton School of Public Service
The University of Arkansas Clinton School of Public Service is the first school in the nation to offer a Master of Public Service (MPS) degree, it gives students the knowledge and experience to further their careers in the areas of nonprofit, governmental, volunteer or private sector service.
Unique Internship Provides New Perspective
Stephannie Baldwin, General FACS Major, completed an internship during Summer 2018. Her internship site was at Dogwood Hills Guest Farm in Harriet, AR. Stephannie’s objectives were to better understand how to serve a community that has limited nutrition education. She wanted to expand her knowledge on nutrition through learning how to grow, plant, and sustain organic produce. She aspires to teach communities how to cook healthy meals and bring her FACS background to areas where there isn’t a lot of opportunity.
During her internship, Stephannie had the opportunity to network within the community by group education, meeting with farmers, and teaching children from rural areas on nutrition education and cooking. She also experienced hands on farming and caring for the animals that live at Dogwood Hills. It was a very intense educational experience that she never could have received in the classroom, however, partnered with the skills she learned in the classroom it brought the internship full circle during her last semester.
“I am excited to see what the future holds for me in my pursuit of a meaningful career. It is important to me that my career is one that gives back to the community. I found through my internship that I have a desire to work with young adults. It was rewarding to see them excited about good nutrition and overall health. This small community taught me the importance of having a community extension service and how that might be the path I pursue”
Healthy Active Arkansas Ambassador Training
Healthy Active Arkansas (HAA) is hosting an Ambassador Training Saturday, September 7, 2018 from 10:00 a.m. – 2:00 p.m. The training is targeting youth and young adults that have an interest in various aspects of health. The training will focus on the Governor-endorsed HAA plan to increase the number of children, adolescents, and adults who are at a healthy weight and ways to promote HAA in the community. Students Inspire Gifts for Habitat for Humanity
Led by 2017-2018 Student Unit Co-leaders Jill Vanderhoof of Iowa State University and Joshua Eddinger-Lucero of University of Central Arkansas (pictured l-r below),
the Service Project, entitled “Collage for a Cause,” proved to be a huge success, garnering donations in excess of $1,500 from Atlanta conference attendees and surpassing the original $500 goal (the amount of money it takes to paint a Habitat house).
Kimberly Spear, sponsorship manager at Habitat for Humanity of Atlanta, accepted the monetary gifts and paint chip collage that donors created at the Annual Conference Capstone luncheon on June 27th. She brought thanks from Habitat, and shared that the collage now has a new home on the “Habi-Wall” at the Atlanta office.
FACS Faculty Take on AAFCS Annual Meeting
Mrs. Rebekah Luong, Mrs. Monica Leiblong, and Dr. Nina Roofe presented their most recent research on student’s perspectives of financial well-being. Mrs. Rachel Schichtl presented a poster. Joshua Edinger-Lucero, SGA President and FACS major, presented and closed out his year serving as the national student rep for AAFCS. Way to represent UCA FACS nationally! Go Bears!
