New Year-New Name

The Department of Family & Consumer Sciences announces a name change to the Department of Nutrition & Family Sciences, effective January 2021. While our department has grown and evolved over the years, content areas in the department remain focused on the science and art of living and working well in our complex world. Our courses are designed to enhance individual wellness and quality of life and to produce graduates who practice in an ethical and socially-responsible manner. We work to assist individuals, families, and communities to make informed decisions about their well-being, relationships, and resources to achieve an optimal quality of life. Changing the department’s name to Nutrition and Family Sciences more accurately reflects the makeup of the students in our department and lessens any confusion of names between the department and degree programs. We offer the following programs for undergraduate and graduate degrees:

  • Bachelor of Science in Family & Consumer Sciences
  • Bachelor of Science in Family & Consumer Sciences Education
  • Bachelor of Science in Community Nutrition
  • Bachelor of Science in Dietetics
  • Bachelor of Science in Nutrition Sciences
  • Master of Science in Family & Consumer Science
  • Master of Science Dietetic Internship
  • Master of Science in Nutrition

UCA in Florence: Join us for Study Abroad

  • The scholarship application deadline for summer 2021 is October 9th at 4:30 p.m. Notifications will be emailed by October 30th. The notification email will detail deadlines to pay the deposit and accept the scholarship if a student is awarded. If a student is accepting a scholarship, the deposit deadline is Dec. 11th.
  • Students will be asked to upload answers to short response questions. Please preview these prompts before beginning the application.

Dietetic Interns Work on Food Preservation

Friday October 6th, Dietetic Interns worked with Julian Carpenter, a UCA alum and current cooperative extension agent in Independence county to make grape jelly!

Dietetic Intern Works with Campus Dietitian

Dietetic Intern Jordan Bellew spent the week working with our campus dietitian, Nathan Slinkard MS, RD, LD. While there, Jordan got to assist in counseling patients, spoke with campus athletes, and wrote this month’s Nutrition With Nathan newsletter! When asked about his time with the campus dietitian, Jordan said “this experience gave me confidence to use my nutrition education to help patients reach their goals.”

UCA is Wellness!

April 2nd, the UCA Dietetic Interns and Student Dietetic Association members hosted booths at the UCA Wellness Fair. The interns covered the importance of a balanced diet using the MyPlate model as well as discussing sodium and fat content of various foods. The SDA students held a sampling of herb flavored lemonades.

Science of Cheese

The Dietetic Interns hosted an event to educate undergraduate students preparing for a study abroad trip to Italy! During the event, students were able to make their own mozzarella cheese and learn the science of how wine, olive oil, and cheese are made. Buon Viaggio!

K-12 Lamar Wellness Fair

The Dietetic Interns had a busy day teaching the students of Lamar about the various components of a healthy meal at the Lamar Health Fair. Each booth at the fair provided fun facts about nutrition along with interactive learning activities. In addition, nearly 15 pounds of fresh veggies were served throughout the fair. Special thanks to K-12 Culinary Connection for including the interns in this unique experience.
