National Honor Society Scholarship Awarded at UCA
Andree Muldoon, a Nutrition major at UCA, was awarded the Margaret Jerome Sampson Scholarship from Phi Upsilon Omnicron (Phi U). Phi U is a national honor society in Family and Consumer Sciences that was founded in 1909 at the University of Minnesota. The purposes of Phi Upsilon Omicron are to (1) Recognize and promote academic excellence; (2) Enhance qualities of leadership by providing opportunities for service; and (3) Encourage lifelong learning and commitment to advance family and consumer sciences and related areas.
This $5000 scholarship will help Andree achieve her goals and is a huge honor for her and Family and Consumer Sciences at UCA. She will be recognized in the fall issue of the national Phi U magazine, The Candle. Way to go Andree!!
School Gardens Flourish Due to UCA Student’s Involvement
Brooke Long, a senior Nutrition major, has fostered a school garden program at Mayflower Elementary. Brooke hatched the idea last fall and has worked diligently to get items donated for the gardens, build the gardens on her own time, and cultivate seeds. She also conducted research looking at the waste of fruits and vegetables in the school lunchroom. She plans to go back after students have had a chance to work in the garden and evaluate their fruit and vegetable waste again. Check out these awesome pictures from Brooke’s hard work!!
BIG NEWS: President’s Leadership Fellows
Shark Chef
Shark Chef was part of our Experimental Foods (NUTR 4351) class this semester. It is a little bit different than it has been in the past – the presentation was a blend of the TV shows, Iron Chef and Shark Tank. Students were given a real life problem to solve….with the new food regulations brought forth by the Healthy, Hunger-Free Kids Act, some school lunch programs are struggling to find products to meet their needs.
Our students were given 1 of 8 problems to solve and they created a food product based on National School Lunch Program requirements. All foods have no added salt or sugar, use whole grains, have no trans-fat and limited saturated fat. Students were also required to integrate commodity food products, reduce allergens, and utilize red, orange, and dark green vegetables as well as a few other restrictions.

30th Annual Alumni Luncheon

Stock Market Game Winners
Infiniti Ingraham, Alisa Bour, and Whitney Price comprised the winning team in this year’s Arkansas College Division of the Stock Market Game. They named themselves the “Monetary Maniacs” and invested in high flying airline stocks that helped them soar to first place. The 39 UCA teams were sponsored by Merrill Lynch and the Arkansas Council on Economic Education. Economics Arkansas also provided the monetary award. Dr. Mary Ann Campbell’s personal and family finance classes in the Family and Consumer Sciences Department participated.
