50’s Night at the Senior Center

The Nutrition students in Nutrition Services Administration hosted another successful theme meal at the Conway Senior Wellness and Activity Center! The theme was 50’s Fun and included a live Marilyn Monroe to take photos with, records and albums from the era, a menu with hamburgers, roasted potatoes and more!

We  would like to say THANK YOU very much to the Arkansas Geriatric Education Collaborative, which is funded by the Health Resources and Services Administration’s Geriatric Workforce Enhancement Program, for helping us produce such a wonderful meal and serve seniors in our community.

Faulkner County Urban Farm Workday

Students from Rachel Schichtl’s NUTR 3350 Community Nutrition class recently spent a workday at Faulkner County Urban Farm to help plant fruit trees. A total of 8 fruit trees and a blueberry bush were planted with funds from a Service Learning Grant the class received. The Faulkner County Urban Farm ( located behind the Faulkner County Library) provides nutrition and garden education to school aged children up to adults. Here in a few years children and adults alike should be able to enjoy figs, apples, pears, peaches, blueberries and more ! Great job students!

31st Annual FACS Alumni and Student Recognition Luncheon

LEGO Day in First Year Studio!!

Students were given 30 minutes to build a prairie house with directions, then 30 minutes to build a model showing at least elements & principles of design (With written summaries of course). They did a great job!

Fundraiser for Levon Helm Memorial Project

The Levon Helm Memorial Project was set up with the goal of saving the boyhood home of Levon Helm in Marvell, Arkansas. He was born in Turkey Scratch, Arkansas, attended high school in Marvell and became a multiple Grammy award winner, acted in The Right Stuff, Coal Minors Daughter (among others) and an inductee to The Rock and Roll Hall Of Fame as a member of The Band.

The students raised $1808.00 for the project with a house party featuring The Wildflower Review (one of which opened for some of Levon’s concerts.) Levon’s daughter, Amy Helm, reached out to us and helped get us in contact with several key people that knew her dad. My Historic Preservation class and Advanced class all had parts in the project. Historic Preservation did all of the research for the Determination of Eligibility for the Department of Arkansas Heritage and The National Trust for Hustoric Preservation. After going down to Marvell to see the site, the house and an additional property, Advanced class designed a Visitors Center/Museum, Restaurant and concert stage for the property.

Anna Lee Amsten, made famous by Levon writing about her in 2 songs, The Weight and Anna Lee, attended the fundraiser and was so moved by the students efforts. (She cried twice at the fundraiser.) Artist Kevin Kresse (who sculpted the bronze bust of Levon for the project) also came and donated his study sketches for the students to auction. On December 2nd, students and Dr. Bryan drove down to Marvell to present the project to Barbie Washburn who heads up the Levon Helm Memorial Project.

Fun Fiesta at the Faulkner County Senior Center

Students in Nutrition Services Administration fed about 200 seniors this November. The class planned and executed a theme meal with a fiesta flair. Decorations included balloons, pinatas, streamers, and more. The menu was confetti slaw, seasoned green beans, fiesta rice, taco salad casserole, and pound cake with fruit compote. We  would like to say THANK YOU very much to the Arkansas Geriatric Education Collaborative, which is funded by the Health Resources and Services Administration’s Geriatric Workforce Enhancement Program, for helping us produce such a wonderful meal and serve seniors in our community.

Nutrition Faculty Named as Arkansas Academy of Nutrition and Dietetics President-Elect

Dr. Alicia Landry has been voted in as the next President-Elect for the Arkansas Academy of Nutrition and Dietetics. She will serve a four year term on the Board of Directors. Congratulations Dr. Landry!


Health Fair at Magazine

Dietetic Interns helped conduct a health fair at Magazine Schools. They had six booths on things like fruits and veggies, dairy, MyPlate, and more!



#FNCE 2017

UCA Dietetic Interns took on Chicago in October. All twelve interns attended the Academy of Nutrition and Dietetics Annual Food and Nutrition Conference and Expo (FNCE). Four interns were student hosts and stayed 7 days in the windy city. They had a great time, met famous nutrition professionals, and ate lots of great food.

Current MSDI Seth Buckman attended an early morning breakfast for Sports, Cardiovascular, and Wellness Nutrition (SCAN) dietetic practice group members. He won a new textbook edited by our very own JJ Mayo.
