The social media campaign, “Making a Difference Through Family & Consumer Sciences,” highlights a different theme and strategies that can be carried out through family and consumer sciences education programs (school-based or community-based) each month, all focused on recognizing the importance of both family and consumer sciences educators and programs. We want to engage family and consumer sciences professionals, advocates, and ESPECIALLY program participants who will reach out to their respective social media networks–therefore reaching other prospective family and consumer sciences educators! For October:
Educators share about why they are a family and consumer sciences educator and the impact they make. Change profile photo to “Proud Educator” image on Twitter and Facebook. Profile photo can be used throughout the campaign. (http://www.aafcs.org/res/Educator_Recruitment/Dr. Landry and several of the dietetic interns hosted the Art of Food at UCA Downtown on Saturday October 1st. Visitors learned about MyPlate, played games, and then made a portrait of themselves using fruits and veggies.
On Friday September 30th, Dr. Roofe and two dietetic interns, Melissa Minnich and Taylor Sherrill demonstrated Nutrition Focused Physical Exam (NFPE) skills to attendees at the Northwest Arkansas District of the Academy of Nutrition and Dietetics fall seminar. According to the Academy of Nutrition and Dietetics, NFPE is a systematic head-to-toe examination of a patient’s physical appearance and function to help determine nutritional status by uncovering any signs of malnutrition, nutrient deficiencies, or nutrient toxicities. NFPE is one of the five domains of a nutrition assessment, along with diet history, medical history, BMI, and clinical data. Earlier this year Conway Regional Medical Center hosted the first NFPE workshop in the state where attendees had the opportunity to practice on real patients during rounds with Academy trainers in very small groups (6 participants and 1 trainer) and became prepared to return to their facility and train RDN colleagues.
Our very own dietetic intern, Rachel Bilderback, knocked it out of the park this month with her newsletter submission to Arkansas Department of Health’s Arkansas Healthy Employee Lifestyle Program newsletter. Rachel wrote all about fruits and veggies and provided a great recipe. Click here to read the article.

UCA’s Residential Interior Design class was given a 2-week timeline to create a self-sufficient container community for a non-profit organization to benefit a chosen demographic. The students worked as a team and chose to create a camp for troubled teens. They utilized 95, 20-foot containers and created a two-acre site for the camp, “Hope Mountain,” which has the capacity to house 50 students and 25 counselors. The camp contains student living quarters, community areas, 3 food trucks, greenhouse, community kitchen, counselor quarters, and schoolhouse.
Thursday, September 15, the students presented their project and self-sufficient living research to their instructor, Danielle Barron, along with guests Dr. Nina Roofe and Maria Posada. Their work will be on display in MAC 205 until Tuesday, September 27.

teacher. She is married and has two wonderful children. They all enjoy spending time with their family and friends, going to church, and playing anything outside. Both of Tara’s children have started school this year and, while she loves teaching, she has the desire to further her own education while joining our FACS family here at UCA.
