Dietetics and Nutrition Therapy Class of 2024 – 2025

Ella Austin grew up in the Fort Smith, Arkansas area, surrounded by a big family with a big love for food. She received her Bachelor of Science degree in Dietetics in May of 2024 from the University of Central Arkansas. Ella enjoys reading, intentional conversations, and anything involving the outdoors and sunshine. With a fascination for pediatrics, pregnancy, and women’s health, Ella hopes to one day work with these communities, either in clinical or policy development, to provide beneficial nutrition care for many stages of life. While these areas hold a special place in her heart, Ella looks forward to learning from the wisdom of others in all areas of dietetics.

 

Vincent Guyette grew up in Batesville, Arkansas. He graduated from Arkansas State University -Jonesboro with a BA in English in 2015. He met his wife, Amber, the same year. They were married in 2018, the same year Vincent relocated to Conway, AR through the Kroger Management program. Vincent has felt for a long while that preventative care and nutrition, in particular, have been overlooked by our medical system. When his daughter, Aurora, was born in 2021 he decided to pursue a career that would support his desire for a variety of things. An environment that encourages health and well-being, the opportunity to help and support others, and a healthy work-life balance to maximize his time with Amber and Aurora. Vincent is interested in the corporate wellness side of dietetics as well as communications and distributing nutrition knowledge. In his downtime, he enjoys audiobooks (fantasy, self-help, varying non-fantasy topics), various tv and video games, using AI to create images.

 

Faith Hargis was born and raised in Conway, Arkansas. She graduated from Lyon College in 2022 with a degree in Psychology. In college, Faith fell in love with healthy eating and noticed incredible improvements in many facets of her health. Faith’s goal is to help others improve their health and well-being through nutritional care. Faith loves teaching yoga, playing video games, disc golf, and gardening! She is thrilled and beyond grateful to be on this educational journey with UCA.
Originally from Bryant, Arkansas, Nathan McElwrath holds a bachelor’s degree in psychology and is currently pursuing a master’s in Dietetics at the University of Central Arkansas. Driven by a profound passion for evidence-based wellness, Nathan’s professional interests extend to clinical nutrition, nutrition counseling, as well as integrative medicine, with a focus on enhancing physical and neurological performance through nutrition. Nathan is deeply committed to aiding clients in improving their quality of life through personalized nutrition interventions. Beyond his professional endeavors, Nathan finds joy in weightlifting, designing strength-hypertrophy programs, and crafting nutritious meal plans. An avid cook, he delights in preparing wholesome meals for loved ones while continually exploring innovative approaches to optimize his health and those around him.

 

Litzi Martinez was born in Tasquillo Hidalgo, Mexico but currently calls McRae, Arkansas home. She will be graduating from UCA with a Bachelor of Science in Dietetics in May of 2024. Outside of school, she enjoys going on walks, thrifting, painting, and spending time with family & friends, and her two cats. Litzi discovered her interest in nutrition from a family member pursuing the same degree. She is currently working as a dietary aide in an assisted living facility where she is gaining knowledge. She hopes to be a dietitian who specializes in either WIC, pediatrics, or nutrition counseling near a high population of Hispanics/Latinos while serving low-income communities and educating them.

 

Carolyn Oseguera was born and raised in Hot Springs, Arkansas. She will be graduating with a Bachelor of Science in Dietetics in May 2024. Growing up in the food service industry due to her parent’s restaurant, her love for food and nutrition grew. She centers her life around cooking and exploring new environments with family and friends, especially when traveling. Being a part of the Latino community, she hopes to bridge language and cultural barriers to provide nutrition education to those who need it most. Carolyn looks forward to exploring the diverse areas of dietetics and finding her place to make an impact.
Gabbie Spriggs is a native of Baton Rouge, Louisiana, and attended Louisiana State University where she obtained a degree in Nutrition and Food Science with a concentration in Dietetics. Gabbie has two siblings, Jack and Grace. Growing up, nutrition and how the body functions was always fascinating to her. She played competitive soccer, so she has always had a deep understanding of the importance of a balanced diet and how it affects an athlete’s performance. In her free time, she enjoys running, playing with her dog, and spending time with her friends and family. Although she is unsure of what specialty she would like to pursue, she knows that she would like to work in a clinical setting. Gabbie’s biggest goal is to help individuals with their relationship with food. She is excited to see what she will accomplish in the field of Nutrition and Dietetics!
