Andie Montgomery

Andie Montgomery grew up in Fort Smith, Arkansas. She graduated from the University of Central Arkansas with a Bachelor’s of Science in Nutrition in May 2021. Andie enjoys playing sports, drinking coffee, being outside, and spending time with her family and friends. After shadowing several dietitians, Andie was confident in pursuing a future career in the field. Teaching others about having a healthy relationship with food is something Andie looks forward to, and she is excited to see other areas of dietetics in the internship.

 
Maggie Waltrip

Margaret (Maggie) Waltrip grew up on the Little Red River in Heber Springs, Arkansas. She graduated magna cum laude from the University of Central Arkansas with a Bachelor of Science in Nutrition in December of 2020. Maggie is married to her husband Alex and resides in Vilonia, Arkansas. They have a mini Australian shepherd named Duke and a black lab named Shadow. She enjoys taking walks, dining out, shopping, fishing, and spending time outdoors with her husband and fur babies. Her passion for nutrition began when her father was diagnosed with nonalcoholic fatty liver disease. She committed to the thought of becoming a dietitian when he passed away due to his illness in 2016. Her motivation, encouragement, and commitment comes from her father and family. Maggie hopes to work in a clinical setting and use her past experiences to connect with her patients.

Rose Rofkahr

Rose Rofkahr is from Ozark, Arkansas. She graduated from the University of Central Arkansas in May of 2021 with a Bachelor of Science in Nutrition. Rose enjoys reading, volunteering, gardening, yoga, and taking her dog Millie for walks. Rose first became interested in nutrition after making personal lifestyle changes. She now wants to help others in their own health journeys. After the MSDI, Rose hopes to work as a community dietitian in her hometown where little nutrition education is available. Promoting a healthy lifestyle, she believes, will lead to lasting and impactful change for the community.

 
Vasil Valev

I was born in Bulgaria and moved to California when I was 14 years old. I have been playing sports for as long as I can remember, and growing up I competed in track and field, soccer, and kickboxing. My love for sports sent me to Cal State Long Beach, where I began working as a kickboxing coach and personal trainer while obtaining my Bachelor of Science in Sports Psychology. Throughout the years of training and working with clients, I noticed that nutrition is one side of a healthy lifestyle that most people struggle with. The more I researched nutrition-related topics, the more interested I became in how different foods influence body composition and performance. Eventually, I decided that a formal education in nutrition was the way forward for me, which is why I decided to transfer to UCA. At first, I would like to work in a clinical setting, and one day I hope to have my own practice working with professional athletes and teams (Real Madrid would be nice). Other than sports, I love traveling, camping, playing video games, and cooking.

 
Madeline Lancaster

Madeline Lancaster was born and raised in North Little Rock, Arkansas where she then graduated from the University of Central Arkansas in 2021 with a Bachelor of Science in Nutrition. Madeline enjoys cooking as well as spending her time outdoors camping, and hiking with friends and her dog. She became interested in the field of dietetics after becoming vegetarian for a year. In that time she found how healing food can be wanted to help others do the same. After completing the MSDI, Madeline plans on opening a private practice, as well as working with female athletes that struggle with eating disorders all while traveling all over the world living in a van.

 
Jordan Setser

Jordan Setser grew up in Springdale, Arkansas and graduated in May of 2021 from the University of Central Arkansas with a Bachelor of Science in Nutrition and a minor in Spanish. Growing up as a dancer, Jordan learned the value of fueling your body with good nutrients and energy, inspiring her to continue not only living a healthy lifestyle, but helping others do the same. She loves running, biking, cooking, and trying new things with loved ones. Jordan desires to work with patients with eating disorders as well as patients in the clinical setting. More than anything, she desires to see people build a healthy relationship with food and enjoy life to its fullest.

 
Taylor Ajtun

I graduated from the University of Central Arkansas with a Bachelor of Science in Nutrition in May 2021. I was born and raised in Van Buren, Arkansas. I love cooking and traveling! I became interested in dietetics after learning about the impact nutrition has on our bodies. With further research, I discovered that many communities are not able to access healthy foods because they live in food deserts or are food insecure. I believe that all should have access to affordable and nutritious food. Following the internship, I hope to secure a position as a dietitian with a large corporation, such as Ben and Jerry’s or NASA. Working with Ben and Jerry’s, I see myself finding alternative ways to create healthy and affordable ice cream as well as advocating for justice. I could also see myself working alongside NASA’s dietitians to find foods that are compatible in space

 
Crosjean Sy

I am from Little Rock Arkansas and completed my bachelors in human nutrition and dietetics at the University of Arkansas at Fayetteville. During my free time I like to take pictures of everything ranging from my dog (remi) or what I am eating, and the occasional lifting session. I became interested in Dietetics when I was diagnosed with prediabetes in my senior year of high school and wanted to know what I could do to be healthier. Thankfully I found this major and changed my life for the better. I look forward to learning more about dietetics and diabetes management.

 
Esmeralda Martinez

I am from Hot Springs, Arkansas. My favorite hobbies are hiking, running, and reading. I also love spending time with my family and my Boston terrier named cooper. I grew up appreciating food but became interested in nutrition when my mom was diagnosed with gestational diabetes and then developed type 2 diabetes. I took some family consumer science classes that included a semester of nutrition which helped me choose nutrition as a profession. My goal is to become a certified diabetes educator and treat those who have a language barrier.

 
Jessica Smith

Jessica Smith, a Georgia native, moved to Arkansas at the beginning of high school. She grew up in a family that valued health and fitness, instilling a love for nutrition in her from an early age. She graduated in May of 2021 from the University of Central Arkansas with a Bachelor of Science in Nutrition. She has one brother, and is very close with her family. She loves to work out, bake, and spend time with family and friends. Growing up in an environment that put such emphasis on nutrition and wellness helped sculpt her future, and showed her how important it is to be aware and proactive in your health.

 
Haley Donoway

Haley Donoway was raised in Conway, Arkansas in a family that always encouraged her to pursue higher education and expression. She grew up playing basketball and soccer and greatly enjoyed cooking with her family. With her athletic background, she has experienced the symbiotic relationship between nutrition and performance, which she intends to learn more about in the future. Within the realm of nutrition, she is also interested in learning how to provide nutrition counseling to those with disordered eating behaviors. Haley also enjoys running, biking, strength training, cooking, and a myriad of creative outlets. She believes nutrition and a growth-oriented mindset are important in finding wellness for life.
