
Lane Bailey, a two-time graduate of UCA, was born and raised in Malvern, AR. After graduating in 2020 with a BA in Public Relations, Lane spent a year working in Bentonville before returning to Conway in 2021. Lane discovered their passion for nutrition education and therapy in pursuit of improving their own health across 2022-2023, and graduated with their BS in Nutrition and Dietetics in May, 2026. When they aren’t studying, Lane can be found spending time with friends, manning the grill, or playing Minecraft. Lane’s hope for their future is that they have an opportunity to make a positive impact on their communities and the people in them using the knowledge and experiences they gain from this program.

Mary Biton is from Little Rock, AR. Her interest in dietetics was shaped from her own personal experience as an athlete and through seeing her dad deal with serious health challenges. Mary is interested mainly in sports nutrition, but she also has a strong interest in heart health, and diabetes prevention and management. She hopes to become a registered dietitian and work with athletes across different sports and stages of life. Outside of school she loves to travel, train, spend time with family, and explore new experiences that challenge her growth.

Jennifer Morecraft grew up in Cabot, Arkansas. She earned her Bachelor of Science degree from UCA in May 2026. Outside of school, she enjoys swimming, crafts, board games, and puzzles. Jen discovered her passion for nutrition after taking a dietetics class in high school and has been driven by curiosity ever since. She hopes to be a dietitian who works in child nutrition and to give back to the community in any way she can.
Grayce Nelson was born and raised in North Little Rock, Arkansas. She earned her Bachelor of Science in Dietetics from the University of Central Arkansas and graduated in May 2026. Her passion for nutrition began during her freshman year of college, when she took introductory nutrition courses. Grayce quickly became fascinated by the science of nutrition and the impact it has on overall health and well-being. The more she learned, the more she knew she wanted to pursue a career in dietetics and help
others improve their quality of life through nutrition. Her goal as a dietitian is to educate and empower individuals by connecting them with resources that support their health goals and by helping bridge the connection between food, culture, and a healthy lifestyle. Because the field of dietetics is so broad, she has many areas of interest and she is excited to explore them further through the hands-on experiences and learning opportunities this program offers as she works toward finding her professional niche. In her free time, she enjoys spending time with family and friends, traveling, reading, and trying new foods and experiences. She is excited for gaining valuable experience, building professional connections, and soaking up as much knowledge as possible along the way.

Kalina Osolkowski was born and raised in Chicagoland to Polish immigrants who loved cooking and hosting. Food was always a important aspect in life, so choosing a degree related to food and nutrition was a no brainer. She gained her degree in Nutrition and Exercise Physiology from the University of Missouri in 2025 and spent almost all her college experience working in the sports realm. After graduation, she continued working in the athletic dining hall at Mizzou, gaining valuable hands on experience on how important nutrition is in recovery and development. One day, Kalina hopes to work in sports, whether that be at the collegiate or professional level, or with children. While not at school, Kalina enjoys staying active, especially outdoors, and being around loved ones.

Sequoya Prentice is an international student who was born in Australia and grew up in Christchurch, New Zealand. She moved to the United States in 2022 to pursue her academic and athletic goals. She earned a Bachelor of Science in Dietetics from UCA while competing as a member of the cross country and track and field teams. Growing up in a competitive sports environment helped her recognize the essential role nutrition plays in both health and performance. Sequoya aspires to work in the sports industry as a registered dietitian, helping athletes reach their full potential. When she is not in class or training, she enjoys going to the beach, water and snow skiing, and spending time with friends and family. She hopes to use her personal experiences and expertise to make a positive difference in people’s lives.

Jade Pruitt was born in Salt Lake City, Utah, and has lived in several places across the United States before settling in Conway, Arkansas. He earned his Bachelor of Science in Nutrition from the University of Central Arkansas in 2026. Jade’s passion for nutrition stems from his lifelong involvement in sports and his interest in optimizing health and performance through evidence-based nutrition practices. Having played hockey since the age of four, he continues to stay active by participating in men’s league hockey at the Arkansas Skatium in Little Rock. Through the Dietetics and Nutrition Therapy program, Jade hopes to further develop his knowledge and skills to help individuals achieve their health and wellness goals through nutrition.

Addie grew up in Paragould, Arkansas, surrounded by family with a love for food. She received her Bachelor of Science degree in Dietetics in May of 2026 from the University of Central Arkansas. Addie enjoys spending time with my family, making and drinking her own coffee, volunteering in her free time, baking and cooking homemade meals, and anything involving the outdoors and sunshine. She has a love for serving in the community around her and for pediatrics, she hopes to one day work within these communities to help provide beneficial nutrition care. Addie also is looking forward to expanding her knowledge and working with others throughout the world of dietetics.
